Country Creatures Chef Series – Richard Foster

Kicking off the series on 30th April will be Richard Foster, Executive Chef of Ibai, the city steak restaurant specialising in French Basque cooking. Known for his inventive and bold dishes, Richard has devised a four course feast featuring the likes of Basque style turbot, lamb & boudin noir vol-au-vent with broad beans and a cherry gateau Basque.

Richard Foster was Head Chef and then Executive Head Chef at the Chiltern Firehouse for 10 years. Previously, he was at The Ledbury & Texture restaurant. His approach to food is to take an ingredient or a style of cooking and let the simplicity stay the main focus. Richard has curated a menu for Ibai focused around a charcoal grill, charring the most exclusive Galician Blond & UK Wagyu Steaks, including various produce, directly sourced from the French Basque region.
