Country Creatures Chef Series: Ben Tish

For our second instalment of our Chef Series we welcomed Ben Tish through the doors of The Double Red Duke. Ben is a well known chef, restauranteer and cook book author and now Chef director of Cubitt House, London. He has written many books, inspired by his love of the Mediterranean, the most recent being Sicilia: A love letter to the food of Italy, a beautiful book celebrating this diverse and fascinating culinary area with everything from Sicilian octopus and chickpea stew to roasted pork belly with fennel and sticky quinces and Limoncello semifredo.

Cooking from the open kitchen at the centre of the restaurant Ben served up a delicious Mediterranean inspired feast. Those at the Chef’s table where, as ever, at the heart of the action. Highlights included the whipped Nduja, fennel crackers, orange blossom honey & oregano and the grilled Angus beef rump, grape must, with Grezzina & Romane courgettes and not forgetting the delicious Amalfi lemon and almond cake, mascarpone and thyme.

Sign up to our newsletter to ensure you don’t miss any of our events across the Country Creatures Pubs. Our next Chef Series is by Thomasina Miers on 19th May at The Swan, Ascott-under-Wychwood. I am afraid this is now SOLD OUT but fear not as to follow we have the celebrated and Michelin starred Brad Carter and there are many more in the pipeline so keep an eye out for updates as tables will go fast.

The inaugural classic from the Côte Citron Country Creatures Cricket Club, otherwise known as the Six Cs, took place last Friday beneath a blazing Oxfordshire sun. A competitive day (in spirit, if not in skill) saw some of the country’s finest chefs and critics trade kitchen tools for cricket bats. While the gameplay wasn’t exactly textbook, the rosé flowed, the @cote__citron beers were cold, and the company more than made up for it! A big thank you to all who participated 🏏🌿 #CountryCreatures #CôteCitron
