We and our very busy sun filled garden full of guests at The Swan, were thrilled to welcome Thomasina Miers through the doors in May for a fun filled Mexican night from our outdoor kitchen. Her acclaimed new book ‘Meat Free Mexican’ was the inspiration behind many of the dishes.
Kicking off with frozen margaritas got everyone into the Mexican vibe. Followed by the most delicious collection of treats including a delicious asparagus, red pepper and sage tempura, a wonderful summer tomato and tortilla soup, and an array of vegetables including griddled courgettes, wood fired beets and many others all alongside the most delicious chimichurri, and a chipotle mayo and charred jalapeno dipping sauce to name just two!
